Mother's Day Breakfast

I'm not sure where I would be without my mother, but it wouldn't be very far. If there's anyone who's given me more encouragement, more instruction, more love in my life, it's my "mumsy" (as I've called her for longer than I can recall).

I decided to make her breakfast this morning after she got back from an early church service. I boiled some water, eyeballed in a cup and a half of cut oatmeal and stirred until it was thick. Since we didn't have any milk, which is the preferred liquid for this preparation, I just found an old whipped cream can and squirted some in. It was perfect, giving it a rich, thick consistency. I mixed in some light brown sugar and kept stirring until it was as thick as good risotto.

Then I plated into a hot bowl (heated in the microwave, which I almost always do when serving plates) and laced the top with some maple syrup, drizzled some cinnamon, macerated blackberries and some dried blueberries. A bit of powdered sugar in the final version. My mom loved it! To her it was the ideal breakfast because it's healthy and easy on her stomach. It also helps to lower her cholesterol while being absolutely delicious. The oatmeal still had a nice bite to it unlike the microwaved instant stuff.

Susan: thank you! She is so beautiful! I used to say she was more beautiful than snow white when I was like..3 years old? haha she tells me that story.

Jo: Yeah I haven't had too much oatmeal made from sctach and this was my first time making it, but it was pretty good!
